Bob's Blueberry Muffins


My Uncle Bob is quite a character. Occasionally, when I was growing up he would stay with my family in between treks through Europe and trips to China. Quite a charmer, he would always cook for us to smooth over my mom who could never quite understand why he didn't settle down. Frankly, I don't agree with my mom's assessment of my Uncle-to me he is just a free spirit. Regardless of that, one thing we always agreed on is that his Blueberry Muffins are the very best.--Chelsea, Wild Oats Copywriter


Prep time: 30 minutes, Makes 18 to 24 muffins


2 1/2 cups all-purpose flour
2 1/2 tsp baking powder
1/4 tsp salt
1/2 cup sugar
1 cup buttermilk
2 eggs, beaten
1/2 cup butter, melted
1 1/2 cup fresh or frozen blueberries, rinsed
2 Tbsp. all-purpose flour
1 Tbsp. of sugar for sprinkling

Preheat oven to 400 degrees F. Carefully sift flour, baking powder, salt and 1/2 cup sugar. Mix in buttermilk, eggs and melted butter. Mix berries with 2 tablespoons of flour and then fold mixture into batter. Grease muffin pans and spoon batter until about 2/3 full. Bake for 25 minutes or until golden brown.
